I cook over wood embers and the main advantage compared with charcoal is that the heat is a little less fierce.  As a result, embers provide a more forgiving temperature which means the food being cooked is less prone to burning. 

However, whatever medium is generating the heat, the most important factor for successful grilling is the ability to regulate the cooking temperature.  There is nothing worse than being presented with something that’s burned to a cinder on the outside and half raw on the inside! 

There is an obvious reason why ovens and hobs have temperature controls - different foods need cooking at different temperatures.  My barbecues achieve this with considerable ease and precision by incorporating a grill that raises and lowers at the turn of a handle thus ensuring that whatever is being cooked is done so at the optimum temperature.  

The standard model has a fire tray that measures 890mm long x 640mm wide which is plenty large enough for the embers/coals to only need occupy one half or two thirds of its capacity.  This introduces a further option of direct or indirect grilling where heat is either directly underneath the food being cooked or off to one side.  The large capacity also means that you can cook for longer periods by burning down wood/charcoal in the non-cooking side to augment the cooking embers/coals as they burn out.

My barbecues are hand built to order and while the standard size is extremely versatile and works very well for either professional catering or family use, I can build one to your own dimensions if preferred.
